This is an incredibly unique & refreshing sweet + salty appetizer or side salad to enjoy late summer when melons are in season. We were introduced to this recipe by the owners of the local Latarnia Guest House B&B who happen to also host delicious cooking classes & dinner series featuring local food & drink producers. Their recipe was adapted by the Savory Cantaloupe Salad on Food.com.
Servings: 6 Prep Time: 10 minutes
Ingredients
1 whole (about 3 pounds) cantaloupe peeled, seeded and cut into 1 inch cubes
1/4 cup minced fresh chives
1/4 cup white balsamic vinegar (can use a few drizzles of balsamic glaze instead)
2-3 tbsp very good olive oil
1/4 pound feta (or goat cheese) crumbled into small pieces
1-2 ounces Spicy Finnochiona salami, sliced thin
Directions
Place melon cubes in a large bowl and add everything except the cheese (and balsamic glaze if opting for this) and toss gently until the melon cubes are fully coated. Add cheese crumbles, stir gently and chill. Drizzle balsamic glaze before serving.
