Looking for a new, high protein quick breakfast idea? These bacon & cheesy egg muffins are high in protein and healthy fats to keep you satiated all morning. They are the perfect part of your breakfast or make for a really easy snack on-the-go, too.

Ingredients
- 8 slices Driftless Provisions bacon
- 6 pasture raised eggs
- 1 cup whole milk cottage cheese (we love Good Culture!)
- 4 ounces gruyere (or cheddar cheese), grated (our favorite gruyere is Roth Grand Cru)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder (or 1-2 tbsp freshly chopped chives)
- 1/2 tsp pepper
Directions
- Preheat oven to 350 degrees F.
- In a skillet, cook bacon until your desired level of crispy. Remove and pat away excess grease.
- Grease muffin tin with avocado oil (or neutral oil of your choice). If you're keen to wait until it cools down to safely touch, use some of the extra bacon grease!
- In a large bowl, whisk eggs and cottage cheese together. Stir in grated cheese, chopped bacon, and spices until just combined.
- Fill muffin tins 3/4 of the way full and place in the oven.
- Bake for 15 minutes.
